During the spring and early summer months we are constantly looking for ways to use up eggs. Homesteaders who keep chickens are usually swimming in eggs during the Spring months, and we are no exception! I have been making breakfast burritos, egg casseroles, and quiche for lunch and even dinner on occasion.
This year I have been freeze drying a ton of our extra eggs. We are also eating more egg-based meals for lunch and dinner as well as breakfast. This Spring onion and garlic scape quiche serves for using up eggs and garlic scapes which we have an abundance of this time of year. It freezes nicely too, so making two at the same time uses even more eggs and saves time in the kitchen for later!
We mostly grow soft-necked garlic for storage purposes, but there are a few varieties of hard-neck garlic that we like and so those varieties produce these beautiful garlic scapes! This spring onion and garlic scape quiche would be delicious with potatoes for breakfast or yummy with a nice salad served at lunch or dinner.
In the Spring before the garden has fully blossomed, I enjoy the slow roll out of asparagus, radishes, and tender greens. Garlic scapes, farm fresh eggs, onions, and fresh herbs are all Spring ingredients that are so delicious and included in this recipe!

- 1 cup diced onions
- 2 chopped garlic scapes
- 2 Tbsp Butter
- 6 eggs
- 1 cup milk .
- 1 tsp salt
- 1/2 tsp pepper
- 1 1/2 cups grated sharp cheddar cheese
- Fresh basil
- 3 Ingredient All-Butter Pie Crust
How to Make Spring Onion and Garlic Scape Quiche
- Pre-heat oven to 400 degrees F
- In a medium pan, sauté the diced onions and chopped garlic scapes in the butter. Once they are fragrant and lightly browned remove from heat.
- In a large bowl beat the eggs, milk, basil, salt, and pepper together.
- Once the onions and garlic scapes have cooled a bit, add them to the egg mixture.
- Line a glass pie plate, with the pie crust.
- Add cheese on top of the pie crust.
- Pour egg mixture over the cheese.
- Bake for 35-40 minutes.
- Remove from oven and allow quiche to set for at least 5 minutes before slicing and serving.

- Cook the Vegetables first-It is tempting to short cut here, but it is important to sauté the vegetables first so that they soften and release some liquid before adding to the egg mixture. It also improves the flavor of the quiche because the onions and garlic scapes will be caramelized.
- Use a glass pie plate- Using a glass pie plate allows the crust to cook evenly and not be soggy.
- Good quality cheese matters– Using a good quality cheddar makes a huge difference in the overall product of this quiche. We prefer a white cheddar.
- Let the quiche set-Letting the quiche set for 5-10 minutes is important, so it makes nice slices. If you slice the quiche straight from the oven, it will not hold it’s shape.
- Use Fresh Basil– Fresh basil when you can. It makes the quiche taste fresh and pairs nicely with the spring onions and freshness of the garlic scapes.
- Whip the eggs!- Be sure to give your eggs a really good scramble, almost whipping them. Quiche is essentially an egg custard, and whipping the eggs up well, keeps it light and airy.
