Our boysenberries are not yet mature enough to have any significant harvest. This year we went to a local boysenberry u-pick farm and got tons of ripe yummy boysenberries to enjoy fresh, freeze, and use in recipes. We usually freeze lemon juice in ice trays to preserve lemons, so we always have an abundance of lemon juice to use in various recipes.
Making popsicles is one way that we enjoy the harvest. I like to make them throughout the summer out of whatever ingredients we can get our hands on. I know that they are made with good clean ingredients. The kids always have a cold snack to enjoy while playing with cousins, in the hot summer heat.
These popsicles have a beautiful hombre appearance and would make a beautiful fresh dessert for guests as well. They contain only four clean ingredients, so you can snack on them without worrying about chemicals or man-made additives.
Plus, making popsicles is a fun activity to do together with kids! My kids love to come up with different flavor combinations. Homemade popsicles are also so much more affordable than many store-bought varieties.
To make these boysenberry lemonade popsicles, there are a few tools that you will need if you don’t already have a popsicle mold.
Tools you’ll need to make boysenberry lemonade popsicles
Ingredients you’ll need to make boysenberry lemonade popsicles
- 1 cup lemon juice
- 1/2 cup honey
- 5 cups water
- 1 cup fresh boysenberries, crushed
How to make boysenberry lemonade popsicles
- If you are using fresh lemons, be sure to wash them well so any dirt/residue doesn’t end up in your juice.
- Squeeze lemons with lemon squeezer. We had some frozen lemon juice leftover from our winter lemon harvest. Frozen lemon juice is okay, just DO NOT USE bottled.
- Mix the lemon juice and honey together in the pitcher until thoroughly combined.
- Add the cold water and briskly stir.
- Put the crushed boysenberries into a 16 oz mason jar, or a 2-cup container. Pour some of the honey lemonade you just made onto the boysenberries, to fill the 16 oz container.
- Stir the boysenberry lemonade mixture together.
- Put the remaining lemonade in the refrigerator and save until tomorrow.
- Pour the boysenberry mixture into the popsicle mold about 1/3 of the way full. Cover and freeze for 24 hours or until frozen solid.
- The next day, remove the popsicle mold from the freezer, and the lemonade from the fridge. Pour the lemonade into the popsicle mold to fill the well the rest of the way.*
- Slide the wooden popsicle sticks into the mold and return popsicles to the freezer.
- Freeze popsicles for at least 12 hours before removing carefully from the mold. (It helps to let the popsicles sit on the counter for 5-10 minutes before removing.)
- Enjoy right away or wrap up with plastic wrappers for later!
*Depending on how many popsicles you make, you may have some lemonade leftover to drink.
A note on popsicle molds
In the past we had plastic popsicle molds that had use again plastic “sticks.” These were problematic for us for a few reasons:
- You can only make as many popsicles as your mold will hold, since they are stored in the mold itself.
- By getting a mold that is designed for wooden sticks, you can make them ahead of when you need them. Plus, no more losing the sticks in the yard!
Boysenberry lemonade popsicles tips
- No tray, no problem! – Though having a popsicle mold is totally worth the investment, it is simple to make popsicles without a traditional mold. Here’s how to get around it!
- Ice cube trays
- Small disposable cups
- Muffin tins lined with foil cupcake wrappers
- Simply pour the ingredients into your DIY mold, cover with aluminum foil and spear a wooden popsicle stick through the foil into the center of the mold. The foil will help the stick stay upright.
- Make sure the first boysenberry layer is completely frozen before adding the second lemonade layer. This will keep the colors separate which makes these popsicles look so beautiful!
- Depending on the kind of popsicle mold you use, always check the manufacturer’s guide to learn the proper way to use it.

How long do homemade popsicles last?
This can vary slightly depending on the specific popsicle recipe you are using, but generally homemade popsicles will last for 6-8 months. To keep them fresh longer, put them into a gallon sized freezer bag…even if they are individually wrapped in plastic.
Can I use bottled lemon juice to make lemonade popsicles?
Bottled lemon juice is not ideal for fresh popsicles. Use fresh or frozen from fresh lemon juice to make lemonade.
